The shrimp is chilled and juicy, the avocado turns almost buttery once everything’s mixed together, and the dressing clings to every bite instead of sinking to the bottom like sad salad dressing usually does.

There’s a bit of crunch from the vegetables, a fresh sharpness from the lime, and just enough heat in the background to stop it from tasting too soft or creamy.

Everything feels cold, bright, and ridiculously refreshing straight from the fridge, especially on hot days when proper cooking sounds unbearable.
