Ingredients You’ll Need

For the Fish:

● 4 cod fillets (or swap for your favourite white fish—salmon, haddock, you name it)

● Salt and pepper, to taste

● 1 tablespoon olive oil

● 1 tablespoon butter

For the Creamy Garlic Sauce:

● 2 tablespoons butter (for sautéing)

● 4 cloves garlic, minced (the more, the merrier)

● 1 cup heavy cream (for ultimate richness)

● 1/2 cup chicken broth (or white wine)

● 1/2 cup grated Parmesan cheese (for that cheesy goodness)

● 1 teaspoon Italian seasoning

● Optional: A pinch of red chilli flakes (for a little kick)

● Salt and pepper, to taste

For the Tagliatelle:

● 300g tagliatelle pasta

● 2 tablespoons butter (to coat the pasta)

● Freshly chopped parsley, for garnish

● Lemon wedges, for serving

How to Make It

1. Prep and Cook the Tagliatelle

Boil a large pot of salted water and cook the tagliatelle until al dente. Reserve about a cup of pasta water before draining.

Toss the cooked pasta with butter to keep it silky and prevent sticking.

2. Cook the Fish

Season the cod fillets with salt and pepper. Heat olive oil and butter in a large pan over medium heat.

Add the fish and cook for about 3-4 minutes per side, or until it’s golden and flakes easily with a fork. Remove from the pan and set aside.

3. Make the Creamy Garlic Sauce

In the same pan, add butter and let it melt. Sauté the minced garlic until fragrant (about 1 minute).

Pour in the chicken broth or white wine, scraping up any delicious browned bits from the bottom of the pan.

Let it simmer for 2 minutes to reduce slightly.

Stir in the heavy cream, Parmesan cheese, Italian seasoning, and optional chilli flakes.

Let the sauce simmer gently until it thickens, about 3-5 minutes. Season with salt and pepper to taste.

4. Bring It All Together

Nestle the cooked cod fillets back into the pan, spooning some of the creamy sauce over the top. Let them warm through for a couple of minutes.

5. Serve and Garnish

Twirl the tagliatelle onto plates, top with the creamy fish, and drizzle with extra sauce.

Garnish with fresh parsley and a squeeze of lemon juice for a burst of freshness.
