Ingredients:

For the Cajun Shrimp:

● 1 lb large shrimp, peeled and deveined

● 2 tsp Cajun seasoning

● 1 tbsp olive oil

For the Rice:

● 1 tbsp olive oil

● 1 onion, chopped

● 1 red bell pepper, diced

● 1 green bell pepper, diced

● 3 cloves garlic, minced

● 1 1/2 cups long-grain rice (uncooked)

● 2 tsp Cajun seasoning (adjust to taste)

● 1 tsp smoked paprika

● 1/2 tsp thyme

● 1/2 tsp oregano

● 1 (14.5 oz) can diced tomatoes (with juice)

● 3 cups chicken broth (or seafood broth)

● Salt and pepper, to taste

Garnish:

● Fresh parsley, chopped

● Lemon wedges


Instructions:

Season and Cook the Shrimp:

● In a bowl, toss shrimp with Cajun seasoning.

● Heat olive oil in a large skillet over medium-high heat.

● Sear shrimp for 2-3 minutes per side until pink and cooked through. Remove and set aside.

Sauté the Vegetables:

● In the same skillet, add olive oil, onion, and bell peppers. Sauté for 3-4 minutes until softened.

● Add garlic and cook for 1 minute until fragrant.

Cook the Rice:

● Stir in rice, Cajun seasoning, paprika, thyme, and oregano. Cook for 2 minutes to toast the rice slightly.

● Add diced tomatoes (with juice) and chicken broth. Season with salt and pepper.

● Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.

Combine and Serve:

● Return the cooked shrimp to the skillet. Gently fold them into the rice mixture.

● Remove from heat and let sit for 5 minutes, covered.

● Garnish with fresh parsley and serve with lemon wedges.
