Indian-Style Potato Jalfrezi
I could eat these spicy potatoes straight from the pan before they ever make it to the table.
Add sweet peppers, onions, and that thick jalfrezi sauce, and suddenly potatoes don’t feel like a side dish anymore.

Potatoes are ridiculously good at soaking up flavour, which is exactly why they work so well in a jalfrezi.
Once those chunky pieces have been tossed through the sauce, every bite has that spicy, tomatoey coating clinging to it.
I like keeping the peppers fairly chunky too. Red ones bring a little sweetness, green peppers have more bite, and the onions soften just enough without disappearing completely.
You get something different on your fork each time instead of one big soft mixture.
And this isn’t meant to be a really saucy curry. The sauce should grab onto the potatoes and vegetables, leaving them glossy and deeply coated rather than swimming in liquid. That’s the bit that makes it so good.
I’ll happily eat a bowl of this on its own, but warm naan or rice turns it into a proper dinner.

Instructions
1. Cook the Potatoes
Boil the potatoes in salted water for about 12 to 15 minutes until just tender. Drain well and set aside.
2. Start the Base
Heat the oil in a large frying pan or wok over medium-high heat. Add the cumin seeds and cook for 30 seconds until fragrant.
3. Cook the Vegetables
Add the onion and cook for about 5 minutes until softened. Stir in the garlic, ginger and green chilies before adding both peppers. Cook for another 4 to 5 minutes.
4. Add the Spices
Sprinkle in the ground cumin, coriander, paprika, turmeric, chili powder, garam masala, salt and pepper. Stir continuously for about a minute to toast the spices.
5. Build the Sauce
Mix in the chopped tomatoes and tomato puree. Cook for 8 to 10 minutes until the tomatoes break down into a thick, rich sauce.
6. Add the Potatoes
Fold the cooked potatoes into the sauce, coating them well. Let everything simmer for another 8 minutes so the potatoes absorb the flavors.
7. Finish and Serve
Scatter over freshly chopped coriander and serve immediately with steamed basmati rice or warm naan.
