Ingredients

1 lb smoked sausage or kielbasa, sliced into rounds

1 lb baby potatoes, halved (or quartered if larger)

12 oz fresh green beans, trimmed

3 tbsp olive oil

3 garlic cloves, minced

1 tsp smoked paprika

1 tsp dried thyme

1/2 tsp onion powder

1/4 tsp red pepper flakes (optional, for heat)

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Instructions

1. Prep the Ingredients:

●  Preheat your oven to 400°F (200°C). Wash and halve the potatoes.

● Trim the ends of the green beans. (Tip: If you’re short on time, use pre-washed, pre-trimmed green beans.)

2. Season the Potatoes:

●  In a large mixing bowl, toss the potatoes with 2 tbsp olive oil, smoked paprika, thyme, onion powder, and a pinch of salt and pepper. Spread them evenly on a large baking sheet.

3. Roast the Potatoes:

● Roast the potatoes in the oven for 20 minutes, stirring halfway through.

● This gives them a nice head start so they’re perfectly tender later.

4. Prepare the Sausage and Beans:

● While the potatoes roast, heat the remaining olive oil in a skillet over medium heat.

● Add the sausage and cook until it’s browned on both sides, about 5 minutes. Remove from heat.

● In the same skillet, sauté the garlic for about 30 seconds, then toss in the green beans.

● Cook for 2-3 minutes until slightly softened. (Tip: This step helps the beans stay vibrant and flavorful in the casserole.)

5. Combine and Bake:

● Remove the potatoes from the oven. Add the sausage and green beans to the baking sheet, tossing everything together gently.

● Roast for another 15-20 minutes, or until the potatoes are tender and the green beans are cooked through.

6. Garnish and Serve:

●  Sprinkle with fresh parsley before serving. Serve warm, straight from the baking sheet, for a rustic, no-fuss meal.

Tips for Success

●  Smoked Sausage: Choose a sausage with bold flavors, like smoked kielbasa or Andouille, for extra depth.

● Crispier Potatoes: Spread everything out in a single layer on the baking sheet. Overcrowding can make the potatoes steam instead of roast.

● Green Beans: If you prefer softer beans, blanch them in boiling water for 2 minutes before adding to the skillet.

● Meal Prep: This reheats beautifully! Store leftovers in an airtight container for up to 3 days.

This casserole is comfort food at its finest. Pair it with crusty bread or a side salad to round out the meal!
