Thai Steak Bites with Thai Fried Rice

Ingredients
For the Steak
- 1½ pounds sirloin steak, cut into bite-sized cubes
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon fish sauce
- 1 teaspoon brown sugar
- ½ teaspoon black pepper
For the Fried Rice
- 4 cups cooked jasmine rice, chilled
- 1 tablespoon vegetable oil
- 1 cup diced carrots
- 2 cloves garlic, minced
- 2 tablespoons Thai sweet chili sauce
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce
- 1 teaspoon sesame oil
For Serving
- 8 to 10 shishito peppers
- 1 teaspoon oil
- Fresh cilantro, chopped
- Lime wedges
How to Make It:
1. Season the steak.
In a bowl, toss the steak cubes with the soy sauce, oyster sauce, fish sauce, brown sugar, garlic, and black pepper until evenly coated.
2. Sear the steak.
Heat the oil in a large skillet over medium-high heat. Cook the steak in a single layer for 2 to 3 minutes per side until browned.
Work in batches if needed so the meat sears instead of steams. Transfer to a plate.
3. Cook the carrots.
Add another drizzle of oil if needed, then cook the diced carrots for 3 to 4 minutes until just tender.
Stir in the garlic and cook for 30 seconds.
4. Fry the rice.
Add the cold jasmine rice to the skillet, breaking up any clumps. Stir in the sweet chili sauce, soy sauce, fish sauce, and sesame oil.
Cook for 4 to 5 minutes, stirring often, until the rice is hot and evenly coated.
5. Blister the shishito peppers.
Heat a separate skillet over high heat. Add the peppers with a little oil and cook for 3 to 5 minutes, turning occasionally, until blistered and lightly charred.
6. Assemble.
Divide the fried rice between serving plates. Top with the steak bites, arrange the blistered shishito peppers over the top, then garnish with chopped cilantro and lime wedges. Serve immediately.
