17. Leftover Turkey Fried Rice

Thanksgiving Turkey Leftover Recipes19 Thanksgiving Turkey Leftover Recipes

  • 1 cup frozen peas
  • 1 small carrot, finely diced
  • 4 spring onions, sliced

  • 1 teaspoon sesame oil
  • 2 tablespoons neutral oil

Cold rice really is the move here. Freshly cooked rice tends to go soft and clumpy instead of getting those slightly toasted bits.

I’d use red, yellow and orange peppers here rather than green. They get sweeter as they roast and suit the turkey filling much better.

  6. Add the turkey chunks and simmer gently for another 5 minutes, just until heated through.
  7. Spoon the stew into bowls beside fluffy white rice.
  8. Scatter over spring onions and parsley.

Keep the turkey pieces fairly chunky. They look much better in the finished stew and are less likely to dry out while warming through.

  4. Pour in the stock and cream.
  5. Stir in the Parmesan and Italian seasoning and simmer until the sauce thickens slightly.

  7. Toss in the pasta, adding a splash of pasta water if the sauce needs loosening.
  8. Finish with plenty of cracked black pepper, a little more Parmesan and fresh basil.

This one should stay creamy rather than dry, so save that pasta water. A splash at the end makes a massive difference.
