● 12 oz pasta (penne or linguine work beautifully)

● 1 lb chicken breast, thinly sliced

● 2 chipotle peppers in adobo sauce, finely chopped (adjust based on your spice tolerance)

● 1 cup heavy cream

● 1 cup chicken broth

● 1 cup diced tomatoes (canned works great)

● ½ cup grated Parmesan cheese

● 1 tsp smoked paprika

● ½ tsp cumin

● Salt and pepper to taste

● Fresh cilantro, chopped (for garnish)

Instructions

1. Cook the Pasta

● Boil a large pot of salted water and cook the pasta according to package directions.

●  Reserve about ½ cup of the pasta water before draining.

2. Sear the Chicken

● Heat the olive oil in a large skillet over medium heat. Season the chicken slices with salt, pepper, smoked paprika, and cumin.

● Cook the chicken until golden brown and fully cooked, about 3–4 minutes per side. Remove from the skillet and set aside.

3. Start the Sauce

● In the same skillet, add a touch more olive oil if needed, then sauté the onions until soft and translucent, about 3 minutes.

● Add the minced garlic and cook for another 30 seconds.
