Turkey Sausage Breakfast
This turkey sausage breakfast is what i like to make when I’m properly hungry in the morning.
You get browned turkey sausage patties, crispy potatoes, soft scrambled eggs, spinach, and enough seasoning to make breakfast feel like an actual meal instead of something you grabbed on the way out.

I’m not very good at pretending a tiny breakfast is going to keep me going.
If I’m eating in the morning, I want something with a bit of substance, and this plate definitely has that covered.

1. Roast the potatoes
- Preheat the oven to 220°C or 200°C fan.
- Add the potatoes to a large baking tray.

- Sprinkle with garlic powder, smoked paprika, salt, and black pepper.
- Toss well and spread them out in one layer.
- Roast for 30 to 35 minutes, turning once halfway through.
You want the potatoes golden on the outside with a few darker edges.
They should still be soft and fluffy inside.
2. Make the turkey patties
- Add the ground turkey to a bowl.
- Add the smoked paprika, garlic powder, onion powder, sage, thyme, salt, black pepper, and maple syrup.
- Mix gently until combined.
- Divide the mixture into 9 portions.
- Shape each one into a fairly thin round patty.
Do not squash the mixture too aggressively.
The more you compact ground turkey, the firmer the patties become.
3. Cook the patties
- Heat the olive oil in a large frying pan over medium-high heat.
